Zucchini Noodles with Pesto Recipes Faster Than Takeout and Twice as Delicious

Ingredients:

– 2 medium zucchinis – 1 cup basil pesto (store-bought or homemade) – 1 cup cherry tomatoes, halved – 2 tablespoons pine nuts (optional) – Olive oil – Salt and pepper to taste – Grated Parmesan cheese (optional)

Use a spiralizer or a vegetable peeler to create zucchini noodles (zoodles). If using a peeler, make long strips.

Heat a tablespoon of olive oil in a skillet over medium heat. Add the zucchini noodles and sauté for about 2-3 minutes until just tender.

Remove the skillet from heat, then stir in the pesto and cherry tomatoes. Mix until the zoodles are well coated.

Transfer to a serving bowl. Top with pine nuts, and season with salt and pepper. Add grated Parmesan cheese if desired.
